In 2009, Michael and his wife Nobuyo, opened Haisai (which means good morning in Okinawan) as an extension of Eigensinn Farm’s philosophies and practices using locally raised and foraged ingredients. Haisai was nominated and awarded the top new restaurant in Canada by Enroute Magazine and the top new restaurant by Toronto Life Magazine in 2010.
Located in the heart of South Georgian Bay close to Devil’s Glen and Osler Ski & Golf & on a high traffic route to Collingwood and the Blue Mountains, the restaurant is a fascinating work of art, as if Antonin Gaudi descended on Southern Ontario and adorned the rustic room with organic flows of stone and ceramic. Every fragment tells a story and is a reflection of Michael & Nobuyo’s commitment to providing guests with a departure from the modern norm and extraordinary food.
The dining room is a synopsis of Grey Highland Ontario, Germany, and Okinawa, Japan where Noboyu is from. Lots of sea shells from Okinawa that have been carried back from travels over the years. The walls are made from clay from their pond and rocks from Eigensinn Farm fence rows. The tables are made from silver maple and the chairs from cedar, apple, maple, cherry, and elm wood. Then there is the mosaic work; all growing out of different elm wood branches. Each branch has its own identity. One is called Okinawa, it includes all the primary colours of Okinawa. Other branches include the classic fifties, Chinatown, the ocean, kaffeeklatsch, nature boy, champagne lines over the bar, and many others.

After 13 wonderful years, Michael, Nobuyo, and their son Hermann have made the decision to simplify and focus on their private dinners at Eigensinn Farm.
